Easy Recipes for the Busy Piano Teacher: Recipe #3 Greek Chicken

This is my absolute favorite recipe that I’ve discovered recently! Don’t forget to check out Recipe #1 and #2 at the end of the post.

Greek Crockpot Chicken

Ingredients:

  • 6-7 boneless, skinless chicken thighs
  • 1/2 C chicken broth
  • 1 lemon, thinly sliced
  • 1/3 C pitted kalamata olives (find these on the olive/pickle aisle)
  • 4 cloves garlic, diced
  • 1 t. dried oregano

Directions:

Remove extra fat from chicken. Mix together chicken broth, garlic, oregano, and olives in a crockpot. Place chicken in the broth mixture. Place lemons on top of the chicken. Cover and cook on low for 5 to 6 hours until chicken is tender.

Serve with plain rice, Onion Rice (recipe below) or orzo. I like to use my rice cooker which has a delay timer and also happens to steam carrots at the same time!

Onion Rice

This takes a little longer than regular rice, but you can do the prep work before your lessons and then place it in your rice cooker and delay the cooking until just before dinner.

Ingredients:

  • 1 T olive oil
  • 1 red onion, finely chopped
  • 1 C  long grain white rice
  • 1 t. black pepper
  • 2 C chicken broth (or however much your rice cooker dictates for 1 C of white rice)

Directions:

Heat the olive oil and saute the red onion until it looks tender. Add the rice and mix with the onion and oil. When the rice browns slightly, add the pepper and pour in the broth (or transfer to your rice cooker and add the appropriate amount of broth). Lower temperature and simmer for about 20 minutes.

    No, you don’t need to put any extra water in the crockpot. The 1/2 C chicken broth is enough liquid!

  2. We like Crockpot Salsa Chicken also. I just put chicken thighs in the crockpot, and pour a small jar of salsa over it, and cook for the afternoon on low. I put rice in the rice cooker (now I will try Onion Rice), and put a salad in the fridge. When it’s done, we eat it just like that, or sometimes we put shredded cheese and sour cream on top.
