Easy Recipes for Busy Piano Teachers – Recipe #4 White Chicken Chili

Brrrr…it’s been one of the coldest winters in a long time for many of us. So, this week’s easy recipe should be just what we all need. Don’t forget that you can see all the recipes so far (more are coming) if you click on this category: Easy Recipes for the Busy Piano Teacher.

White Chicken Chili

Ingredients:

  • 6-7 skinless, boneless chicken thighs
  • 1 large onion chopped (about 1 C)
  • 3 cloves garlic, minced
  • 1 3/4 C chicken broth
  • 1 t. cumin
  • 1 t. dried oregano
  • 1/2 t. salt
  • 1/4 t. tabasco sauce
  • 2 cans of northern beans, drained and rinsed
  • 1 can of corn niblets (or other small kernel)
  • 3 T lime juice
  • 2 T. fresh cilantro

Remove excess fat from chicken. Stir together the onion, garlic, broth, cumin, oregano, salt, and tabasco in a crockpot (at least 3.5 to 4 qt). Place the chicken in the crock pot and spoon mixture over the chicken. Cover and cook on low for 4-5 hours.

About 20 minutes before serving, remove chicken and shred into pieces with forks. Return to the crockpot and add the beans, lime juice, corn, and cilantro. Cook for another 20 minutes on high until warm.

Serving:

I like to eat this with the cornbread that I whip up during those 20 minutes of warming the beans.

  1. Wendy, You don’t say when to add the corn and lime juice. I’m guessing they should be added at the end with the beans? Do you drain the corn? People who cook a lot wouldn’t need to ask, but I’m no chef. This sounds easy enough for even me, though.
